Jeff Undercuffler from Albany:
Undercuffler, a redshirt sophomore, threw for 6,406 yards and 59 touchdowns over four seasons with the Great Danes, including the abbreviated spring 2021 season.
In 2019, he led the Football Championship Subdivision with 41 touchdown passes while guiding the Great Danes to the Football Championship Subdivision playoffs. He was runner-up for the STATS FCS Jerry Rice Award, which goes to the national offensive Rookie of the Year.
But he had his struggles this season. He threw for 1,781 yards and eight touchdowns with seven interceptions. He has two years of eligibility left.

Scott Jr., who signed with LSU, before going JUCO, then Missouri and Nicholls State, entered the portal as a grad transfer after passing for 3,767 yds and 34 TD, plus rushing for 1,547 yds and 15 TD in 18 games with the Colonels.
